Beef FAQs

What makes your specialty beef unique?

Our specialty beef is unique because it is a special breed known as Blonde d'Aquitaine, and it's raised locally with a focus on quality and reasonable farming practices. It's naturally lean, tender, and delicious due to our careful breeding, raising, and feeding practices. How is your beef raised and sourced?

Our beef is sourced primarily from our farm, we also supplement from local and regional farm partners known for their quality and farming practices. They must meet or exceed various criteria for us to accept their products.

Is your beef grass-fed or grain-fed?

Our beef is grass-fed and hybrid-finished. What this means is that our cattle are fed grass, hay, and related natural feeds throughout their lives. During the finishing process we continue to use grass and hay feeds but also supplement with a variety of alternative feeds including silage. This produces a unique flavor and nutrient profile while still providing lean healthy meats, and just the right amount of marbling on certain cuts.

What breeds of cattle do you raise?

We primarily raise our specialty Blonde d'Aquitaine cattle.

Can you describe the flavor profile of your beef?

Our beef is renowned for its rich, distinct flavor. It's naturally lean but tender and boasts a well-balanced taste that's both savory and delicious. The flavor stands out distinctly from any supermarket or grocery store meat you will find elsewhere, and is also much more nutritious. Our Farm-to-Table model provides a quality and flavor you won’t find in any chain or generic store, and even stand-out from your typical butcher shop.

What are the most popular beef cuts you offer?

Some of our most popular cuts are steaks such as Ribeye, Filet Mignon, Sirloin & Porterhouse.

Which beef cuts are best for grilling?

Ribeye, New York Strip, and Sirloin are excellent choices for grilling. Their marbling and tenderness make them perfect for a juicy and flavorful grilled steak.

Which cuts are ideal for slow-cooking or braising?

Cuts like Chuck Roast, Brisket, and Short Ribs are ideal for slow-cooking or braising. They become incredibly tender and flavorful when cooked low and slow.

Which cuts are great for smoking?

Some popular cuts for smoking are Brisket, Ribs, Chuck Prime and Sirloin roasts, Flank Steak, and Skirt Steak.

Which cuts are best for making jerky?

For jerky you'll want to stick with leaner cuts. Some popular cuts for jerky are Top & Bottom Round, Sirloin Tip, Flank Steak, London Broil, and even Filet Mignon for a premium jerky.
Remember, it's typically preferred to cut against the grain and properly marinate the jerky to obtain the best flavor and texture.

What's the best way to prepare lean beef without overcooking it?

This will vary depending upon the cut and cooking style you are using. Keep an eye on your heat or cooking temperature and the temperature of the meat with a thermometer. There are various tips and tricks you can use along with experience to ensure your meat doesn't over cook.
For lean beef steaks, like Filet Mignon or Sirloin, we recommend searing it quickly on high heat to achieve a nice crust while keeping the inside medium-rare.

Our most popular pork cuts include Pork Chops, Pork Tenderloin, Baby Back Ribs, and Pork Shoulder. These cuts are known for their tenderness and versatility.

Which pork cuts are best for roasting?

Pork Tenderloin and Pork Shoulder are excellent for roasting. They can be seasoned and slow-roasted for a tender and flavorful result.

Which cuts are recommended for making tender pork chops?

We offer boneless pork chops and also bone-in pork chops. Either option may suit your taste for making tender and juicy pork chops. They can be pan-fried, grilled, or baked.

What's the ideal pork cut for making pulled pork?

Pork Shoulder is one go-to cut for making pulled pork. Slow-cook or smoke it until it's fork-tender, then shred for delicious pulled pork sandwiches or tacos.

Chicken wings and Chicken Thighs are ideal for making crispy fried chicken. The skin becomes wonderfully crispy, while the meat remains juicy.

Which chicken part is ideal for soups and stews?

Chicken drumsticks and Chicken Thighs are perfect for soups and stews. They add rich flavor and remain tender during long cooking times. Or you can cut up Chicken breasts or use our Chicken Breast Strips also.

Do you offer specialty or marinated chicken options?

Not at this time, we do not offer any seasoning or marinated options.

Turkey FAQs

Do you sell Turkey products?

Yes. Our selection is currently very limited and we are looking to grow our options and inventory.

What do you currently sell?

We periodocally sell ground turkey. We also sometimes offer seasonal turkey.
